Director of Toronto’s Division of Food Control during the First World War, Dr. A.R.B. Richmond, estimated that in 1935 (just three years after the publication of 100 Glorified Recipes), Torontonians consumed 800 glasses of milk per minute. Such an estimate illustrates the importance of milk and milk products during the Great Depression.
