Introduction
The Fredericton Cathedral Organ Fund Cookery Book was compiled in 1907 by multiple Christ Church Cathedral members in Fredericton, New Brunswick. J & A McMillan, one of the most important book publishers in the Maritimes, oversaw the book's publication. The cookbook was created and sold to raise money for a new organ for the church. Inside the book are very few images. Other than the advertisements, there is just one image on the cover. The book was printed on fragile, plain brown paper and contains 164 pages of different recipes ranging from fish and other entrées to cakes, puddings, and candies. The book is nicely organized, containing eighteen subsections that include various recipes. At the beginning of the cookbook, it is stated that the authors did not create the recipes included, but they were tried and tested by the people whose names appear next to them. The recipes included in the book are not too complex and could be made by anyone at the time. Due to the importance of the fishing industry in the Maritimes, many of the recipes include lobster or other fish and seafood.
