The title of this cookbook is Canada’s Most Famous Dessert Jell-O. This cookbook was written in 1924 by the Genesee Pure Food Company of Canada, Limited, the company that produced the Jell-O brand products that were used for all the recipes in this book. The book’s primary purpose is likely to promote the Jell-O brand of product by showing readers the different ways this Jell-O can be used in various recipes - that is, possibly attempting to appeal to the public by showing how multipurpose this Jell-O is, with it being appropriate for desserts, snacks, puddings, fruit and vegetable salads, among other recipes included in the book. The book was written mainly for Canadian housewives who were interested in learning to cook with Jell-O, as this is stated at the top of the first page in the introduction; judging from the word “Canada’s” in the title of the cookbook, it is apparent that the book was sold to the Canadian public. This cookbook is an important primary source because it helps the modern readers to see what cooking with Jell-O looked like in the 1920s. This book allows us to compare the recipes and methods of preparation of that time period to how we cook today, which in turn allows us to analyze what changed and what did not change, as well as to think further about why certain changes happened and what could have influenced them.
