This recipe is an interesting one to mention, because nowadays it would appear odd and probably would not be as accepted as it was in 1920s, when the book was published. This recipe is just one example from this cookbook, which includes many more similar recipes of savoury dishes using fruit flavoured Jell-O as one of its ingredients. This recipe is an example of how trends, tastes, and the idea of what is popular and acceptable have changed throughout the years, and continues to change. Also, this recipe probably could be used to represent the 1920s because of how extraordinary it is (just like the 1920s were extraordinary in a way). The combination of vegetable salads with condiments, meat, fish or eggs (boiled eggs in this specific recipe), and savoury salad dressing and the sweet fruity Jell-O appears quite unusual and odd to today’s public, when compared to more common and conventional food pairings and mixing; just like how the 1920s were quite different and contrasting when compared to the previous times, before the war, in terms of its drastically changed lifestyle.

This recipe is interesting to note because it appears that more attention is paid to the way it is presented rather than to the taste qualities. As shown on the image, this recipe is supposed to be made in a special mold to make it look nice; the recipe presentation matters here, and this reflects the way entertainment was viewed in 1920s. As mentioned in this cookbook, the reason behind such recipe decorations is to entertain the guests, which reiterates the importance of entertainment in 1920s society. Another reason why this recipe is worth mentioning is because besides using the regular Jell-O it also calls for the whipped Jell-O, which requires a different preparation method. At the beginning of this cookbook, there is a page with instructions on how to prepare whipped Jell-O. It is suggested to use a Dover or Ladd egg beater. These egg beaters were innovations of the era, and they were more efficient as they required less effort but promised a better result. This reiterates the importance of technological advancements and inventions during the post-was times, and shows how such innovations were applied in all aspects of lives, including the kitchen.
