Introduction

Historical cookbooks are valuable documents as they provide us with insights into what people in the past considered appropriate nutritional sources. The cookbook, Butter: Vital for Growth and Health is one such example. Created by the National Dairy Council of Canada in the 1920s, the focus of this cookbook's eleven pages is the various benefits of using butter and how vital it is for children to grow into strong and healthy adults. The booklet emphasizes the importance of including butter in every meal and provides the so-called nutritional benefits of butter. The book begins by highlighting how butter should be used and what role butter plays in the daily diet, as well as the benefits of butter over margarine. The book also discusses how butter is made and how it makes its way to the family dinner table. It also provides examples of how valuable butter is as a food, through quotes from mothers and famous chefs. This copy of Butter: Vital for Growth and Health has been kept in near perfect condition and provides valuable historical insights into the foods that were touted as healthy and essential in Canada in the 1920s.
