Introduction

The Milky Way to Health and Beauty: Selected Recipes is a cookbook produced in the 1940s by a Toronto-area dairy company called Highland Dairy Limited. There are a variety of recipes provided in the book, all of which list milk as a key ingredient. The cookbook is divided into the following subsections: “Soups and Chowders,” “Vegetable Dishes,” “Meat, Fowl, Fish Dishes,” “Egg and Cheese Dishes,” “Desserts,” “Party Suggestions,” and “Snappy Milk Drinks.” The book's creators claim that “milk is the one article in the present human diet that provides for almost every possible need of the body,” so Canadians should be consuming more of it. As it was published by a dairy company, it is very likely that the main purpose of this book was to boost milk sales. However, the focus on the nutritional value of milk stems from evolving understandings of health and nutrition at the time.
