Recipe Cards
This recipe for Corn Fritters consists of corn, flour, baking powder, salt, “a little” pepper, and an egg. There are no details provided about how to proceed once all the ingredients are gathered, such as the order in which the ingredients need to be mixed. Presumably, one would mix all ingredients in whatever order suited the cook. Following the list of ingredients, the recipe states to cook in deep fat with no guidelines on the amount of time this takes or what the appearance of the final product should be. The vague instructions complement the cookbook’s intended audience as it is stated the cookbook is meant for women with children. These women would have been expected to have a solid understanding of the basics of cookery and would not have needed specific instructions and guidance.
Orange Marmalade is a fruit preserve made from bitter oranges, three lemons, four quarts of water, and eight pounds of granulated sugar. This is a lengthier recipe from the cookbook as it requires numerous steps that are to be completed. The preparation for the Orange Marmalade includes cutting the oranges into thin slices and removing the seeds. Once this is completed, cold water is poured over the sliced oranges, and this was to sit for twenty-four to thirty-six hours. Once the time for this is completed then it is to be boiled for two hours. The recipe then states to add sugar and boil further for between twenty and thirty minutes. Although marmalade requires days to prepare, its popularity came from the canning process and that it could be stored and used for up to a year.
