This cookbook was written and published by N.C. Polson & Company in 1904. At the time, the company was located in both Canada and the United States. The Canadian office was in Kingston, Ontario and the American office was located in Connecticut. From the information provided in the book, we know that N.C. Polson & Company was in the field of pharmaceuticals. They describe themselves as "manufacturing chemists" and "wholesale druggists" many times throughout the cookbook. Their logo and company name are plastered all over the front of various medicines and treatments for common illnesses plaguing North America at the time. The founder of the company, Neil C. Polson, was a graduate of Queen’s University and became well-known across North America for his role in this company. Polson was such an admired and recognizable figure that he was elected mayor of the city of Kingston in 1893. The company was eventually taken over by his sons, Neil Jr. and Henry Polson.
