Edith L. Elliot was a Canadian author who lived in Ottawa, Ontario. Unfortunately, not much is known about Elliot except that she wrote eight cookbooks similar to Salads That Are Different between 1930 to 1938. The first cookbook she wrote was Canadian Vegetables for Every Day in 1930, which was also published by the Department of Agriculture. In the early part of the 20th century, the Department of Agriculture hired several women to author their cookbooks and these women came to be seen as authorities on the subject matter due to their sex. Elliot's books contain many similarities in terms of the content, organization, and messages being communicated about consuming fresh foods as often as possible for their healthful properties. Along with educating readers about consuming fresh foods and how to preserve them, she also advised on ways to cut costs when shopping. Salads That Are Different and her other publications from the 1930s highlight that, despite living through a deep economic depression, healthy food should still be consumed and it could be procured at a manageable cost.
