Introduction

Why and How to Use Skim-Milk was a small pamphlet produced in 1922 by the Canadian Department of Agriculture to educate the public on the benefits and uses of skim milk versus regular whole fat milk. Written by Helen G. Campbell, this small pamphlet (consisting of only four pages) is also meant to assist readers with lactose sensitivities and allergies and encourages the consumption of a cheaper option than normal full-fat milk. Why and How to Use Skim-Milk was part of a larger collection of informational publications produced by the Department of Agriculture, such as Why and How to Use Buttermilk and Why and How to Use Milk. Likely, this pamphlet was distributed freely to anyone who inquired and wished to receive a copy or was available to shoppers at local grocery stories. Since this pamphlet was free of charge, it was accessible to a range of Canadians. An interesting fact about the pamphlet is that it even shows readers how to make their own skim milk. We can see through this pamphlet that common recipes in the early 1920s used fairly standard and commonplace ingredients, making the recipes and information easy to understand and replicate.
