This recipe for Cream of Pea Soup utilizes seven ingredients, excluding the salt and pepper for seasoning. The preparation time for this recipe is at least three hours, in addition to the several hours required to soak the peas. The main ingredient of this recipe is split peas, which were grown locally throughout Canada and were easily accessible for most families during the 1930s. The recipe also calls for salt pork or bacon, which is an ingredient that dominated the red meat industry in the 1930s in Canada. Since Milk: The Food of Foods focuses on incorporating milk into Canadian diets, it is no surprise that milk is one of the main ingredients in this Cream of Pea Soup recipe. In terms of preparation, the recipe requires simmering the water, onion, and pork for three to four hours, which suggests that stovetops were used by many families at that time. The measurements in this recipe are standardized cups and tablespoons, making the recipe precise and easy to follow for any cook.

The Ham Soufflé also uses seven ingredients, excluding the pepper and paprika for flavour. The ingredients required for this recipe would have been considered common, affordable, and easy to find in Canada in the later 1930s. Ham is one of the main ingredients in this recipe and was a staple on many dinner tables. Milk, unsurprisingly, is also used, which follows the trend of highlighting dairy products in Milk: The Food of Foods. The preparation for this dish involves using a stovetop to melt the butter and then incorporating flour and milk to make a sauce. After adding salt, bread crumbs, ham, and eggs the mixture is poured into a baking dish and cooked in a 350 degree oven for 45 minutes. Many Depression-era cookbooks did not include time and temperature specifications, making this one unique for offering this information to cooks.
