Recipe No.1: Glazed Apricot Mustard Chicken Breast with Rosemary

This recipe is an excellent example of how Norene has created a flavorful, nutrition dense recipe by combining fresh herbs, and ingredients that we probably already have in our fridges and cupboards. The preparation of this recipe is quite simple, and nowadays we can even buy chicken breast that already has its skin trimmed off so we can skip that step from the instructions. Afterwards, the rest of the steps are plain and simple; mixing the ingredients together and then marinating the chicken, followed by placing it into the oven.

Again, below the recipe Norene offers alternative ingredients to use if there are any personal preferences or dietary restrictions that would cause any complications whilst creating the dish.

Recipe No. 2: Ethal Cherry’s Smokey Eggplant Dip

This recipe is a little bit different than your traditional party cracker dip. Norene’s recipes portray the combination of different kosher flavors and her creativity, and this recipe reflects exactly that. This dip is not only loaded with different flavors, but it provides an enormous amount of micro and macronutrients extracted from eggplant (a great source of vitamins and minerals aiding digestion, increasing cognitive functions, and improving cardiac regulation), and from the different herbs; cumin (improves cholesterol level and is iron rich), as well as parsley (rich in vitamins, potassium, calcium aiding bone health).

The preparation is a little bit time consuming due to the prebaking of the vegetables. Once the prebaking is done, all ingredients are mixed together in a processor until a creamy texture is created and then left to set and chill in the refrigerator prior to serving it.
