“Refrigerator Bran Muffins”
This recipe is an effective example of how the ingredients listed in Take it Easy Make it Easy are not always obvious. The recipe calls for sugar yet does not specify brown or white sugar. Due to the inclusion of molasses in the recipe it is assumed it would be white sugar as brown sugar has molasses in it already, however, not everyone may know this. Furthermore, on this topic, the oil used is not described such as olive oil, or vegetable oil.
This recipe is perfect for busy moms, as is written under the title. The idea is that you can make the batter in advance and keep it in the refrigerator making batches of muffins as needed. It makes up to five dozen muffins, so essentially five batches. This would be great for an easy breakfast in the morning as it only takes eighteen minutes to bake. The recipe lasts for three to four months in the refrigerator, however, this seems incorrect. The batter would most likely go bad before this.
“You’ll-Never-Believe-it Roast Beef”
This recipe is dripping with simplicity, emphasizing the objective of the cookbook. There are only two ingredients, roast beef of any size and salt and pepper to taste, both accessible to any home. Nevertheless, the instructions are not overly clear. The cook is required to turn off the oven and then turn it back on for a certain amount of time to obtain the desired result (rare, medium, or medium-well). It is unclear why the oven is being turned off in between this time instead of simply switching to the required temperature. The writer of this recipe does mention that they do not know why it works either, consequently, there is an aspect of trust involved in this recipe. The only way to find out is to try it. Whether the recipe works or not it is undeniably a simple recipe, fitting in with the theme of the cookbook: easy recipes.
