Introduction

The Au Naturel Tofu Manual: tofu recipes for families was published in 1983 in Montréal, Québec, Canada by Chloé and Abraham Fox. The authors were the owners of a health food store in Montréal called AU NATUREL-Traditional Foods. The authors created the cookbook to encourage and promote a healthy and nourishing diet using tofu, and also to help sell products like tofu in their health food store. The authors promote vegetarianism, health food, and using tofu as a replacement for animal products by giving the user lots of information about tofu and its health benefits: including it being low in calories, sodium, and pesticides, and high in protein. As it says on the cover, this cookbook aims to provide easy tofu recipes for the everyday family. The book is very on theme, containing thirty-five recipes that all showcase tofu as a versatile main ingredient that can be incorporated in virtually every meal of the day, even dessert. The recipes in the book are split up into four categories: Entrées, Main Dishes, Desserts, and Miscellaneous. The ingredients of the recipes are whole-food based, natural, nutritious, and minimally processed. The audience of the book is the everyday homemaker who wants to make their family’s meals healthier, more nourishing, cost-effective, interesting, and attractive. The book contains no pictures, however short stories providing tips, the origin of the recipe, and other notes are present under each recipe, making the cooking experience more personal.
