Introduction

This cookbook is titled Take is Easy Make it Easy, and it is a collective of recipes gathered by the staff and parents of the Miriam School for Special Children, as well as others who donated time and recipes. Although there were many who contributed to the cookbook, it was edited and put together by just a few. Abby Kleinberg-Bassel was the editor, Lorraine Caplan was in charge of recipe layout, Evelyn Shadowitz was in charge of proofreading and indexing, and Norene Gilletz was the editorial consultant as well as the previous owner of this specific cookbook. The idea for this cookbook began in 1981 when the school was hit with severe budget cutbacks. The goal of the cookbook was to raise money to combat the cutbacks so the school could continue to provide essential resources to the children. The recipes used in this cookbook are meals suitable for the average family and the ingredients can be characterized as accessible and common. Take it Easy Make it Easy is an important primary source as it shows what the typical family meals may have looked like in the 1980s. The recipes are most likely contributed from the moms of the school, therefore they would reflect what would have been made after school and after work for a family with school aged children in the 1980s. Not just school aged children, but children who may also have a disability. Perhaps this means that these families had less time to cook thus the emphasis on easy meals means a lot more.
